In his gut Daniel Tomlin from Kelowna’s Moonstone Kimchi ’n’ Krauts knows fermented foods are the best way to a healthy life.

And as a regular at the Kelowna Farmers and Crafter’s Market, he can be heard explaining how they increase digestive well-being to anyone who wanders into his booth for a question.

“We have to put good bacteria and yeasts into our diet,” he said. “We live in such a sterile world now, we have to put good bugs back in.”

Tomlin said a lot of the gut-troubles from North American food can be pinned on Louis Pasteur.

“All we’ve done since Louie Pasteur found out he could make his beer last faster if he cooked it first is (cook) everything,” he said. “Now all these years later, everything is sterile and our guts are under attack.”
